Fall is almost here and I couldn’t be happier about that. After being majorly pregnant for a majority of the summer I am more than ready for things to cool off. As we celebrate Labor Day and prepare to set the clocks back I’m excited that it’s almost fall. But, before summer is officially gone I do want to share this delicious Baked Pineapple & Jalapeño Tilapia recipe with you because it’s been one of my favorites as of late. It’s healthy, quick, and only takes a couple of ingredients to prepare, so obviously we’ve been enjoying it a lot recently.
During a trip to Trader Joe’s I grabbed a bag of frozen pineapple tidbits. At the time I wasn’t sure what I would use it for but the tropical flavor was calling my name. I definitely did not anticipate preparing it with fish, but the result is great.
A lot of similar recipes around the web call for a pineapple or mango based relish to top the fish once it’s cooked. I didn’t feel like fussing with that so I just made a layer of pineapple and jalapeños on the foil for the fish to rest on.
For this recipe you’ll just need some fresh tilapia, jalapeño, pineapple, spices, and foil. I wrapped my fish in a foil packet rather than using a baking dish. If you do this as well, you’ll want to make sure to wrap the foil so it traps the steam. This will help infuse the flavor and cook the fish.
Fresh out of the oven, the moment the foil packet comes open you’ll be pleasantly surprised by the sweet and savory smell. The flavors are subtle, yet delicious. This is one of my new favorite ways to prepare fish.
